Savoury muffins with egg and bacon
Delicious for a lunch or as a snack. You can easily prepare the muffins in advance. Perfect to take with you on a busy day.

Ingredients
- 50 grams ERU Balans Chives
- Oil spray or butter
- 10 grams chives
- 4 round slices of bacon
- 1/2 red onion
- 3 eggs
- Salt and pepper

Preparation| 10 min
- Pre-heat the oven to 180 °C.
- Remove the ERU Balans Chives from the fridge to get to room temperature.
- Grease the muffin tins with oil spray or butter.
- Finely chop the chives.
Method| 15 min
- Line the muffin tins with the round slices of bacon.
- Clean and finely chop the red onion.
- Beat the eggs and set aside.
- Mix ERU Balans Chives with a stick blender and add a few drops of water if necessary.
- Add the egg mixture to ERU Balans Chives and mix until smooth.
- Add the chives, onion and salt and pepper.
- Pour the mixture into the tins until they are ¾ filled.
- Bake the muffins in the middle of the oven for 15-18 minutes.
