Fried plaice with green asparagus
Calling all fish lovers! Serve this fried plaice with green asparagus and courgettes with potato puree. Finish this refreshing dish with a chive sauce.

Ingredients
- ½ green courgette
- ½ yellow courgette
- 2 tablespoons olive oil
- 125 grams green asparagus tips
- 100 ml semi-skimmed milk
- 100 grams ERU Balans Chives
- 400 grams potato puree
- 500 grams plaice
- 1 tablespoon flour
Preparation| 20 min
- Thinly slice the courgettes and mix with olive oil.
- Blanche the green asparagus for 1 minute in salted boiling water.
- Bring the milk to the boil with ERU Balans Chives and stir until it becomes a smooth sauce.
Method| 15 min
- Heat the potato puree and season to taste.
- Season the fish with salt and pepper and sprinkle with plenty of flour.
- Heat some olive oil in a pan and fry the fish until cooked and golden brown.
- Grill the courgette and the green asparagus in the pan and season with salt and pepper.
- Put the potato puree on the plate and top with the fish.
- Divide the vegetables over the top and pour over a generous serving of the sauce.
