Fresh couscous salad with apricots, figs and mint
Hearty couscous salad with cranberries, figs, apricots, mint and linseed. With this salad, you go for a tasty and healthy meal!

Ingredients
- 50 grams ERU Balans Mature
- 400 ml vegetable stock
- 300 grams couscous
- 1.5 tablespoon dried cranberries
- 3 fresh figs
- 6 dried apricots
- 3 sprigs of mint
- 1.5 tablespoon linseed
- salt and pepper
Preparation| 10 min
- Remove ERU Balans Mature from the fridge so that it comes to room temperature.
- Boil 400 ml water and add the vegetable stock cube.
- When the water boils, add the couscous and turn off the heat.
- Soak the cranberries in hot water and drain when they are soft.
- Finely chop the figs and apricots.
- Finely chop the mint.
Method| 10 min
- Heat a dry frying pan.
- Toast the linseed over a medium heat until slightly brown, while shaking the pan. After a few minutes, take off the heat.
- Loosen ERU Balans Mature with a mixer and a few drops of water.
- Spoon the couscous into a serving dish and add all the ingredients.
- Stir everything together and season with salt and pepper.
- Spoon the ERU Balans Mature dressing over the salad.
