Energy balls of dates, chia seeds and pumpkin seeds

These energy balls are a perfect snack. Using just 6 ingredients, you can make these energy balls in no time. Healthy and nutritious.

Ingredients

  • 1 tablespoon of chia seeds
  • 25 grams ERU Balans
  • 8 stoneless Medjool dates
  • 10 grams pumpkin seeds
  • 30 grams oats
  • 75 grams grated coconut

Preparation| 5 min

  • Mix the chia seeds with ERU Balans and leave to soak.
  • Put the dates in a mixer and blend till you have a smooth mixture.
  • Add the dates to the cheese mixture.

Method| 10 min

  • Toast the pumpkin seeds in a dry frying pan, keeping them moving, until they begin to “jump” in the pan.
  • Put on a plate to cool.
  • Then mix together the pumpkin seeds, cheese mixture and oats.
  • Make little balls from the mixture.
  • Roll the balls through the grated coconut.
