Savoury muffins with egg and bacon

Delicious for a lunch or as a snack. You can easily prepare the muffins in advance. Perfect to take with you on a busy day.

Ingredients

  • 50 grams ERU Balans Bieslook
  • Oil spray or butter
  • 10 grams chives
  • 4 round slices of bacon
  • 1/2 red onion
  • 3 eggs
  • Salt and pepper

  • Stick blender

Preparation| 10 min

  • Pre-heat the oven to 180 °C.
  • Remove the ERU Balans Bieslook from the fridge to get to room temperature.
  • Grease the muffin tins with oil spray or butter.
  • Finely chop the chives.

Method| 15 min

  • Line the muffin tins with the round slices of bacon.
  • Clean and finely chop the red onion.
  • Beat the eggs and set aside.
  • Mix ERU Balans Bieslook with a stick blender and add a few drops of water if necessary.
  • Add the egg mixture to ERU Balans Bieslook and mix until smooth.
  • Add the chives, onion and salt and pepper.
  • Pour the mixture into the tins until they are ¾ filled.
  • Bake the muffins in the middle of the oven for 15-18 minutes.
