Fried plaice with green asparagus

Calling all fish lovers! Serve this fried plaice with green asparagus and courgettes with potato puree. Finish this refreshing dish with a chive sauce.

Ingredients

  • ½ green courgette
  • ½ yellow courgette
  • 2 tablespoons olive oil
  • 125 grams green asparagus tips
  • 100 ml semi-skimmed milk
  • 100 grams ERU Balans Bieslook
  • 400 grams potato puree
  • 500 grams plaice
  • 1 tablespoon flour

Preparation| 20 min

  • Thinly slice the courgettes and mix with olive oil.
  • Blanche the green asparagus for 1 minute in salted boiling water.
  • Bring the milk to the boil with ERU Balans Bieslook and stir until it becomes a smooth sauce.

Method| 15 min

  • Heat the potato puree and season to taste.
  • Season the fish with salt and pepper and sprinkle with plenty of flour.
  • Heat some olive oil in a pan and fry the fish until cooked and golden brown.
  • Grill the courgette and the green asparagus in the pan and season with salt and pepper.
  • Put the potato puree on the plate and top with the fish.
  • Divide the vegetables over the top and pour over a generous serving of the sauce.
