Fresh couscous salad with apricots, figs and mint

Hearty couscous salad with cranberries, figs, apricots, mint and linseed. With this salad, you go for a tasty and healthy meal!

Ingredients

  • 50 grams ERU Balans Belegen
  • 400 ml vegetable stock
  • 300 grams couscous
  • 1.5 tablespoon dried cranberries
  • 3 fresh figs
  • 6 dried apricots
  • 3 sprigs of mint
  • 1.5 tablespoon linseed
  • salt and pepper

Preparation| 10 min

  • Remove ERU Balans Belegen from the fridge so that it comes to room temperature.
  • Boil 400 ml water and add the vegetable stock cube.
  • When the water boils, add the couscous and turn off the heat.
  • Soak the cranberries in hot water and drain when they are soft.
  • Finely chop the figs and apricots.
  • Finely chop the mint.

Method| 10 min

  • Heat a dry frying pan.
  • Toast the linseed over a medium heat until slightly brown, while shaking the pan. After a few minutes, take off the heat.
  • Loosen ERU Balans Belegen with a mixer and a few drops of water.
  • Spoon the couscous into a serving dish and add all the ingredients.
  • Stir everything together and season with salt and pepper.
  • Spoon the ERU Balans Belegen dressing over the salad.
