Pumpkin roll with chorizo and grilled vegetables
Serve this delicious pumpkin roll filled with grilled vegetables and chorizo for a hearty lunch. Delicious with the refreshing flavour of ERU Balans.

Ingredients
- ½ aubergine
- ½ courgette
- 10 chives
- 1 red pepper
- 1 yellow pepper
- 4 part baked pumpkin rolls
- 100 grams ERU Balans
- 16 slices of chorizo
- Olive oil
- Salt and pepper (to taste)
Preparation| 5 min
- Slice the aubergine and courgette.
- Cut the red and yellow peppers into wide strips.
- Drizzle the vegetables with some olive oil and season with salt and pepper.
- Grill the vegetables in a grill pan for 5 minutes until cooked and leave to cool.
- Bake the rolls according to the instructions on the pack.
- Finely chop the chives.
Method| 20 min
- Cut open the rolls and spread the bottom halves with ERU Balans.
- Divide the chorizo slices over the rolls.
- Top with the grilled vegetables and scatter the chives over the rolls.
- Replace the top halves of the rolls.
