Sandwich with sweet potato, tomato and avocado

Ingredients
- 2 sweet potatoes
- 2 tomatoes
- 1 red onion
- 2 avocados
- 8 slices of brown bread
- 150 grams ERU BioGouda
- 100g oakleaf lettuce
- Olive oil
- Salt and pepper
Preparation| 5 min
- Peel and thinly slice the sweet potatoes.
- Coat the slices with olive oil and scatter with salt and pepper.
- Slice the tomatoes.
- Peel and slice the onions into rings.
- Halve the avocados. Remove the stones and scoop the flesh out of the shell. Mix until smooth.
Method| 10 min
- Heat a frying pan and fry the sweet potato slices on both sides until light brown and cooked.
- Spread ERU BioGouda on one side of 4 slices of bread.
- Place the 4 slices of bread with the spread side upwards. Top with the sweet potato slices.
- Then garnish with the lettuce, onion rings and tomato slices.
- Top with the remaining 4 slices of bread.
