Beef consommé with haricot verts and toast with ERU Spreadable Goat Cheese

This beef consommé is quick and easy to prepare. Serve this as a starter or light lunch.

Ingredients

  • 26 fl oz beef stock
  • 3.5 oz haricot verts
  • 4 slices of tomato bread
  • 3.5 oz ERU Spreadable Goat Cheese
  • Olive oil

Preparation| 12 min

  • Cut the bread into squares measuring 4 x 6 cm.
  • Drizzle with a little olive oil.
  • Spread ERU Spreadable Goat Cheese on the slices of bread.
  • Bake the squares in the oven at 180 180°C/350°F/gas mark 4 until the cheese is golden.
  • Clean the haricot verts and cut them into halves.
  • Blanch them until al dente and rinse until cool.

Prepare| 15 min

  • Heat the stock with the haricot verts.
  • Pour the stock into a bowl or plate.
  • Serve the warm goat’s cheese slices next to the consommé.
