Beef consommé with haricot verts and toast with ERU Spreadable Goat Cheese
This beef consommé is quick and easy to prepare. Serve this as a starter or light lunch.

Ingredients
- 26 fl oz beef stock
- 3.5 oz haricot verts
- 4 slices of tomato bread
- 3.5 oz ERU Spreadable Goat Cheese
- Olive oil
Preparation| 12 min
- Cut the bread into squares measuring 4 x 6 cm.
- Drizzle with a little olive oil.
- Spread ERU Spreadable Goat Cheese on the slices of bread.
- Bake the squares in the oven at 180 180°C/350°F/gas mark 4 until the cheese is golden.
- Clean the haricot verts and cut them into halves.
- Blanch them until al dente and rinse until cool.

- Heat the stock with the haricot verts.
- Pour the stock into a bowl or plate.
- Serve the warm goat’s cheese slices next to the consommé.
