Toastie with cheddar, avocado, mango, cress and sambal

Ingredients
- 1 mango
- 2 avocados
- Olive oil
- 8 slices of brown bread
- 1 carton of cress
- 8 slices of ERU Slices Cheddar Red Pepper

Preparation| 5 min
- Peel the mango, remove the stone and slice thinly.
- Remove the stone and peel the avocados and slice thinly.
Method| 10 min
- Grease the toastie maker with olive oil for each toastie.
- Spread 4 slices of bread with a layer of mango and avocado slices and scatter over some cress.
- Finally, top the bread with 2 slices of ERU Slices Cheddar Red Pepper.
- Top with the remaining 4 slices of bread.
- Heat a toastie maker.
- Cook the toasties in around 2 minutes until golden brown.
- Cut the toasties in half diagonally.
