Refreshing spring onion soup
This refreshing spring onion soup is quick and easy to prepare. Season this creamy soup with onion, garlic and pepper. Serve the soup as a starter or light lunch.

Ingredients
- 2 bunches of spring onions
- 2 onions
- 2 cloves of garlic
- 100 grams ERU Gouda Pepper
- 1 chicken stock cube
- 100 grams crème fraîche
- 50 grams butter
- 60 grams flour
- Salt and pepper (to taste)
Preparation| 5 min
- Finely slice the spring onions into rings.
- Finely chop the onions.
- Peel the garlic and chop finely.
- Dissolve the chicken stock cube in 1.2 litres of cold water.
Method| 10 min
- Mix ERU Gouda Pepper with the crème fraîche.
- Melt the butter in a pan.
- Fry the onion and garlic for 2 minutes.
- Add the flour and cook for 2 minutes over a low heat.
- Now add the cold stock little by little, stirring continuously.
- When all the stock has been added, bring to the boil and cook for another 5 minutes over a low heat.
- Season the soup to taste with salt and pepper.
- 1 minute before serving, add ¾ of the spring onion rings and cook for 1 minute.
- Serve the soup in a bowl, topped with the remaining spring onion rings.
- Garnish with a spoonful of the crème fraîche and ERU Gouda Pepper mixture.
