Toastie with cheddar, grilled vegetables and red pesto
Try this hearty brown bread toastie with grilled vegetables and red pesto. It will easily give you your daily portion of vegetables and it’s just really delicious. A win-win situation if you ask us.

Ingredients
- 1 courgette
- ½ pot grilled red pepper
- Olive oil
- 8 slices of brown bread
- 4 tablespoons red pesto
- 8 slices ERU Slices Cheddar
- 7 grams basil leaves

Preparation| 10 min
- Heat the toastie maker.
- With a knife or vegetable peeler, cut long thin strips of courgette.
- Cut open four grilled red peppers and drain on a piece of kitchen paper.
Method| 10 min
- Drizzle the slices of courgette with olive oil and grill until tender with light brown stripes.
- Spread the red pesto on one side of 4 slices of bread.
- Top the layer of pesto with the grilled courgettes and grilled red pepper.
- Top with 2 slices of ERU Slices Cheddar.
- Scatter some basil leaves over the cheese.
- Place the remaining four slices of bread on top.
- Grill the toasties for around 2-3 minutes until crispy.
