Baked potato with mince and sweet corn

Ingredients
- 4 baking potatoes
- 3.5 oz ERU Smoked Cheese
- 3.5 oz minced beef
- 1 red onion
- 1 clove of garlic
- 1 small can of sweet corn
- Salt and pepper (to taste)
- Paprika powder
- 5 chives
- Olive oil
Preparation| 15 min
- Cook the potatoes in the microwave according to the instructions found on the packaging.
- Pre-heat the oven to 200 degrees on the grill setting.
- Peel the onion and finely chop.
- Peel and crush the garlic.
- Cook the mince with the onion and garlic and add salt, pepper and paprika to taste.
- Drain the sweet corn and mix with the mince mixture.
- Finely chop or cut the chives.
Prepare| 5 min
- Make a small incision in the baked potatoes and carefully scoop out the pulp so that you can fill it.
- Fill the potatoes with the mince mixture and place in an ovenproof dish.
- Top each potato with a spoonful of ERU Smoked Cheese and place the potatoes under the grill for a few minutes to melt the cheese.
- Garnish with the chives and serve immediately.
