Baked potato with mince and sweet corn

Ingredients

  • 4 baking potatoes
  • 100 grams ERU Smoked Cheese
  • 100 grams minced beef
  • 1 red onion
  • 1 clove of garlic
  • 1 small tin of sweet corn
  • Salt and pepper (to taste)
  • Paprika
  • 5 chives
  • Olive oil

Preparation| 15 min

  • Cook the potatoes in the microwave according to the instructions found on the packaging.
  • Pre-heat the oven to 200 degrees on the grill setting.
  • Peel the onion and finely chop.
  • Peel and crush the garlic.
  • Cook the mince with the onion and garlic and add salt, pepper and paprika to taste.
  • Drain the sweet corn and mix with the mince mixture.
  • Finely chop or cut the chives.

Method| 5 min

  • Make a small incision in the baked potatoes and carefully scoop out the pulp so that you can fill it.
  • Fill the potatoes with the mince mixture and place in an ovenproof dish.
  • Top each potato with a spoonful of ERU Smoked Cheese and place the potatoes under the grill for a few minutes to melt the cheese.
  • Garnish with the chives and serve immediately.
